About Hypergoat

Jonathan May is from Ballymun and still lives there. He worked retail management for Tesco and the Thomas Ennis Group, then left Ireland in 2019 with his fiancée for three years in Perth, Western Australia. They came home in mid-2022. "Going to Australia was a trip for the experience," he says. "We always wanted to come home, and I always wanted to start my own business here."

Back in Dublin he took another retail job before the chance came to open a coffee shop with his cousin, Darren May. The first attempt was a shipping container and it fell through. "Then we got the opportunity of a premises on Thomas Street, and we haven't looked back since." Thomas Street opened in June 2023. Darren still works in the business; Jonathan is now the sole owner, and says Darren "was a great help in getting Hypergoat up and running and still contributes immensely to our continued growth and success".

Wellington Quay came in April 2024, next door but one to the Clarence Hotel, and is the biggest of the shops. Swords opened in April 2025. Less than twelve months covered all three openings, which Jonathan is straight about: "I always intended to have more than one. I probably should have gone about it a bit more slowly, because it's been difficult to manage multiple sites, but they're up and running now." Ballymun, his own part of Dublin, makes four.

As of December 2025 he was putting a prep kitchen into Wellington Quay so that Hypergoat could make its own wraps, sandwiches and overnight oats rather than buy them in. Eight people worked across the shops at that point.
