Four shops, open seven days

Jonathan May had managed Insomnia counters inside the Spar chain he worked for, and came home from three years in Perth wanting to open a shop of his own. "I always loved the smell of it," he told Back for Business in December 2025, "but I never actually liked the taste of it. When I came home I wanted to open a retail store, but coffee is where the opportunity was."

The first Hypergoat opened on Thomas Street in June 2023, after an offer of a shipping container fell through. Wellington Quay followed in April 2024 and Swords in April 2025 — three shops inside twelve months — and Ballymun makes four.
